Avocado Toast with Microgreens, Cherry Tomatoes and Poached Egg

This avocado toast with microgreens, cherry tomatoes, and poached eggs is delicious and packed with nutrients, making it a perfect meal to fuel your day!

Ingredients

• 2 slices of your favorite bread (sourdough, whole grain, or a rustic country loaf)

Avocado spread

• 1 ripe avocado, mashed
• 1 tsp lime juice
• 2 tbsp mayonnaise
• 1 tbsp creme fraise
• 1/2 tsp jalapeno finely chopped
• Salt and pepper, to taste
• 1/2 cup cherry tomatoes, halved
• 3 tbsp feta cheese (crumbled)
• A handful of microgreens (such as arugula, basil, Mini broccoli cress, or mini coriander microgreens )
• 1 large egg
• Olive oil for drizzling
• Red pepper flakes or fresh herbs (optional, for garnish)

Instructions

Toast the Bread

  1. Toast the bread slices until golden brown and crispy. You can do this in a toaster, grill, or skillet with olive oil for extra flavor.

Prepare the Avocado

  1. Cut the avocado in half while the bread is toasting and remove the pit. Scoop out the flesh into a bowl.
  2. Mash the avocado with a fork until creamy, leaving it slightly chunky if you prefer texture.
  3. Stir in lime juice, mayonnaise, creme fraise, finely chopped jalapeno, salt, and pepper.

Poach the Eggs

  1. Bring a medium-sized pot of water to a simmer (not a rolling boil). Add a splash of vinegar (optional, to help the egg whites stay together).
  2. Crack each egg into a small bowl or cup.
  3. Gently stir the simmering water to create a small whirlpool. Carefully lower the eggs into the water, one at a time.
  4. For soft, runny yolks, boil eggs for about 3-4 minutes (adjust time if you prefer your eggs firmer).
  5. Using a slotted spoon, carefully remove the eggs from the water and place them on a paper towel to drain.

Assemble the Toast

  1. Spread a generous amount of mashed avocado on each slice of toasted bread.
  2. Add feta cheese and then top with halved cherry tomatoes, arranging them evenly over the avocado spread.
  3. Carefully place one poached egg on top of each toast.
  4. Garnish with microgreens, a drizzle of olive oil, and a sprinkle of red pepper flakes or fresh herbs, if desired.

Serve

Add flavor by seasoning with salt, pepper, and olive oil.
