Ingredients
For the Vinaigrette:
• 3 fresh passion fruits (scoop out the pulp and seeds)
• 1 tablespoon honey
• 2 tablespoons fresh lime juice
• 2 tablespoons fresh tangerine juice
• 2 tablespoons oyster liquor (from the shucked oysters)
• 3 tablespoons extra virgin olive oil
• Pinch of salt
For the Oysters:
• 12 fresh oysters (shucked, keeping the liquor for the vinaigrette)
• 1 small jalapeño, thinly sliced into rounds
• Fresh Coriander

Instructions
Prepare the Vinaigrette:
- In a small bowl, whisk together the passion fruit pulp, honey, lime juice, tangerine juice, oyster liquor, olive oil, and a pinch of salt. Adjust the sweetness or acidity to taste.
- Set aside to allow the flavors to meld.
Shuck the Oysters:
- Carefully shuck the oysters, keeping the liquor intact for the vinaigrette. Arrange the oysters on a bed of crushed ice or rock salt to keep them steady.
Assemble the Dish:
- Spoon about one teaspoon of the passion fruit vinaigrette over each oyster.
- Top each oyster with a thin slice of jalapeño for a touch of heat. Garnish with fresh Coriander
