Shrimp Citrus Salad with Fruit and Herb Vinaigrette
This Shrimp Citrus Salad hits all the right notes—zesty, fresh, and perfectly spiced. Whether it’s a sunny lunch or a standout starter, this salad brings together bold flavors with a light, tropical twist.
Ingredients
For the Cajun Shrimp
• 1 lb shrimp (peeled and deveined)
• 1 tbsp Cajun spice mix
• 2-3 tbsp butter
• Salt and pepper, to taste
For the Citrus Salad
• 2 mandarin, peeled and segmented
• 1/2 pomelo, peeled and sliced into round slices
• 1 pink grapefruit or classic grapefruit peeled, cut into round slices
• 1 blood orange, peeled and sliced into round slices
• 2 orange, peeled, sliced into round slices
• 1 avocado, sliced into wedges or half-moons
• 1 small red onion, thinly sliced
• Fresh mint
• Baby Basil
• Lille baby jam leaves (optional for garnish)
For the Citrus Dressing
• 1/4 cup citrus juice (tamarin, mandarin, or lemonade juice
• 1 tsp honey
• 1 tsp champanje vinegar
• 2 tsp mustard (Dijon or yellow)
• 5 tbsp olive oil
• Salt and pepper, to taste
• 2-3 tbsp parmesan cheese
• 1/4 small red onion, finely chopped

Instructions
Prepare the Cajun Shrimp
- Season the Shrimp: Pat the shrimp dry with paper towels. Sprinkle them with Cajun spice mix, salt, and pepper.
- Cook the Shrimp: Heat a large skillet over medium-high heat, melt the butter, and cook for 2-3 minutes per side until they are pink and opaque. Remove from heat and set aside.
Prepare the citrus Salad
- Slice the citrus fruits: On a large plate, combine the mandarin, pomelo, blood orange, grapefruit, and orange slices.
- Add the Avocado and Onion: Carefully add the slices and thinly sliced red onion to the plate.
Citrus Dressing
- Combine the Ingredients: In a small bowl or jar, whisk together the citrus juice, honey, mustard, champagne vinegar, olive oil, salt, and pepper until smooth.
- Add parmesan cheese and Red onion and mix well.
Assemble the Salad
- Assemble the Salad. Arrange the citrus salad on a large serving platter or individual bowls. Add the cooked Cajun shrimp on top of the salad.
- Dress the Salad. Drizzle the citrus dressing over the top of the shrimp and fruit.
- Optional: Toss in Baby Greens. Add a handful of baby salad greens for extra texture and flavor.
